Fish Head Stew and Sago Bread with Minnows
Sumantra - Indo -Island of Saparua

DESCRIPTION:
After one full week of surfing some of the best reef break you can ever imagine, the BCS has been given a little tip: Somewhere on the island of Saparua there lives an old lady by the name of Oma Lela. She is the grandmother of a surfer Sargent met while getting his but kicked in the waves off of Sumantra…Sargent sets out on a sail from the island of Ambon to meet the legend. He packs his board because you never know on these little islands! Go and eat my Grandmas Sago and Fish head stew…” Sargent sails to her house just for the meal! Sure enough, after much searching on the little island, Sargent finds in a little dirt- floor and palm roofed house: Grandmother Oma. She gives away her room, a comb, and a mosquito coil…she locks them in the house telling them…”I know you young boys, you will leave the house before I have given you my fish head breakfast…so I lock you in so no run off for surfing.” She did not need to lock the BCS in because it was the best bread, and fish head stew he had ever had.

RECIPE: Fish head stew
4 cups water
1 teaspoon salt
3 stalks lemongrass
5 kaffir lime leaves
1 pound Snapper heads.
1 tablespoon fried shallots

RECIPE: spice paste
7 red chilies
6 shallots, peeled
3 cloves garlic
2 inches ginger root, peeled and chopped
1 inch fresh turmeric peeled and sliced
1 tablespoon oil

INSTRUCTIONS:
Make spice paste first by grinding away and blending all ingredients. Add water, salt lemongrass and lime leaves and boil. Put in one big head or a bunch of
little ones and simmer, uncovered. Garnish with the fried shallots.

RECIPE: sago bread
1 cup sago flour
1 cup chopped palm sugar
2 pandan leaves
3 cups water
large spage of banana leaf or parchment paper
fresh grated coconut
pinch of salt
Palm sugar syrup

INSTRUCTIONS:
Combine flour, sugar, pandan leaves and water in heavy pan and bring to a boil. Simmer over low heat for 30 min until thickened as bit. Leave until cool enough to handle. Place on large square banana leaf and roll ingredients into cylinder. Put sticks or toothpicks at two ends to hold in place. Cool in fridge for a few minutes. Slice up and sprinkle slices with coconut and pour over a little palm syrup!!!
